Here’s how to make it! Ingredients: 1 tbsp olive oil 1 onion, chopped 2 garlic cloves, minced 2 carrots, diced 2 celery stalks, chopped 2 medium potatoes, peeled and cubed 4 cups vegetable broth 1 can (14 oz) diced tomatoes 1 cup green beans, chopped 1 zucchini, chopped 1 tsp dried thyme Salt and pepper to taste 1/4 cup fresh parsley, chopped Instructions: Prep the Veggies: Start by chopping your vegetables. Dice the carrots, celery, zucchini, and potatoes, and chop the green beans. Keep them aside for later use. Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion a
